Vanilla Chocolate Swirl Shortbread

Ingredients
Vanilla Dough
  • 125g butter softened
  • 90g caster sugar
  • 1tsp vanilla essence
  • 150g plain flour
  • 40g cornflour
  • 80g chocolate chips
  • !Chocolate Dough
  • 125g butter softened
  • 90g caster sugar
  • 130g plain flour
  • 40g cornflour
  • 20g cocoa, sifted
Instructions
  1. !Vanilla Dough
  2. Cream butter, sugar and vanilla for 2 minutes, until light in colour.
  3. By hand (using a spatula or wooden spoon), mix in the flour, cornflour and chocolate chips, until it comes together in a large clump.
  4. Knead lightly, on a lightly floured surface and set aside.
  5. !Chocolate dough
  6. Cream butter and sugar for 2 minutes, until light in colour.
  7. By hand (using a spatula or wooden spoon), mix in the flour, cornflour and cocoa.
  8. Mix until it comes together in a large clump.
  9. Knead lightly on a lightly floured surface and set aside.
The Roll
  1. Start to roll it up, it may start to crack, so just press the dough back together as you gently roll it up. Either roll the dough towards you, or away from you, you will know which is easier as you start.
Notes
Please note, there is less flour in the chocolate dough!
