Vanilla chocolate swirl anything will always be popular, as it represents the best of both worlds. These bikkies are particularly good, lovely and crispy, with the addition of chocolate chips in the vanilla mix…as if that was needed! The original recipe, a vanilla shortbread, comes from my lovely neighbours. I have added the additional fattening steps, so unnecessary, yet so essential…as most teenagers can attest to…"my bad!"

The only problem is, it requires you to make two mixes and roll then together, which actually isn't easy. If you are experienced it won't be a problem, if you are new to baking it will require some patience. YOU ARE THE BOSS…if you control the dough, it will do as you say, trust me.

I am going to include some photos as a guide to show you what the dough looks like. After creaming the butter you need to mix the rest of the ingredients by hand with a spatula or wooden spoon, as it does require person power to blend all the ingredients together.

ImageTo begin with, the dough will appear quite crumbly. After a few minutes of mixing, it will come together nicely. Give it a light knead on a lightly floured surface then roll it out to a 9x9 inch square. Do the same with the chocolate dough, then place this on top of the vanilla.

The first thing you will do, is roll up just a little bit of the end. It may have been because my bench was freezing cold yesterday, but it did start to crack a bit. If you have a good look at that photo you will see, just in the corner there, a split. NOW…WHEN THIS HAPPENS…you will use your hands to bring it back together, press it together as if you were moulding play dough. This is not an easy roll, you are asking shortbread to do something it doesn't want to, with some coercing and gentle manipulation, you will get there, but you must show care and patience!!!!!

YAY, hopefully you succeeded and you are ready to slice it, this is the fun part. Slice big fat 1cm chunky cookie slices and place on tray. Takes me about 18 minutes, at 170°c.

Vanilla Dough
  • 125g butter softened
  • 90g caster sugar
  • 1tsp vanilla essence
  • 150g plain flour
  • 40g cornflour
  • 80g chocolate chips

  • 40g cornflour
  • 20g cocoa, sifted
Instructions
  1. !Vanilla Dough
  2. Cream butter, sugar and vanilla for 2 minutes, until light in colour.
  3. By hand (using a spatula or wooden spoon), mix in the flour, cornflour and chocolate chips, until it comes together in a large clump.
  4. Knead lightly, on a lightly floured surface and set aside.
  5. !Chocolate dough
  6. Cream butter and sugar for 2 minutes, until light in colour.
  7. By hand (using a spatula or wooden spoon), mix in the flour, cornflour and cocoa.
  8. Mix until it comes together in a large clump.
  9. Knead lightly on a lightly floured surface and set aside.
The Roll
  1. Start to roll it up, it may start to crack, so just press the dough back together as you gently roll it up. Either roll the dough towards you, or away from you, you will know which is easier as you start.
Notes
Please note, there is less flour in the chocolate dough!
