Blueberry Chocolate Chip Cookie

Oooooh, I have just found the perfect cookie recipe. Hankering for something oaty, I did a quick search and found this fabulous recipe from happened to have dried blueberries in the cupboard but these would be just as good with raisins. My recipe is just slighty different to hers, as I use wholegrain oats which I whizz up in the food processor along with the nuts, raisins and chocolate chips, giving the cookies a really good texture. Wholegrain oats add a slight nutty flavour to baking and are a great addition to the store cupboard.

Blueberry Chocolate Chip Cookies

  • 115g butter, softened
  • ½ cup sugar
  • ½ cup brown sugar, firmly packed
  • 1 tsp vanilla essence
  • 1 egg
  • 1 cup plain flour
  • ½ tsp b.s,
  • ½ tsp b.p
  • ½ tsp cinnamon
  • ½ tsp ginger
  • 1¼ cups wholegrain oats
  • ½ cup dried blueberries
  • ¼ cup walnuts
  • ½ cup chocolate chips
  1. Using a bench top mixer or egg beaters, beat together the butter, sugars and vanilla essence until light and fluffy.
  2. Add the egg and continue beating until well combined.
  3. Sift in the flour, b.s, b.p, cinnamon and ginger and beat until combined.
  4. In a food processor, whizz together the oats, dried blueberries, walnuts and chocolate chips unitl they resemble large breadcrumbs.
  5. Add the oat mixture to the flour/butter mixture until combine until well blended. I use my bench top mixer for the whole job, egg beaters won't be strong enough for the final mixing, so just use a wooden spoon or spatula.
  6. Roll into balls and place on a greased oven tray. Press down the cookie dough balls to flatten them slightly.
  7. Bake in an oven set to 170 degrees celcius, for about 15 minutes.
I make the entire mix using my bench top mixer. Little hand held beaters probably won't be able to mix all the mixture, so you may have to combine the butter mix and oat mix by hand, using a spatula or wooden spoon.
