Apple Cake

This apple cake is outrageously good. The recipe comes from a wonderful woman, also called Megan. Her claims to fames, to date, are her bread rolls(amazing), salads(fantastic), pizza dough(my daughter reckons better than mine, I told her to shut up!)…..and now her apple cake. I had this the other evening at her house and I honestly had to hold myself back from really tucking in. I politely had two pieces, which I hope no one noticed, then found myself picking directly from the plate…I just cannot be helped when cake tastes this good.

Meg’s apple cake is best eaten warmed up, or straight from the oven and an absolute must is a good dollop of fresh cream.

Meg's Apple Cake
  • 2 cooking apples
  • 1 cup sugar
  • 1½ cup plain flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice
  • 4oz(115g) butter
  • 1 egg
  • ½ cup raisins
  • ½ cup walnuts
  1. Peel, core and dice the apple. Put into a bowl and sprinkle with the sugar.
  2. Sift dry ingredients.
  3. Melt butter.
  4. Beat egg.
  5. Chop raisins and nuts.
  6. Blend butter and egg with the apple and sugar and add the dry ingredients, the raisins and nuts.
  7. Place mixture into an 8 inch round cake tin.
  8. Bake at a lower temp, 160C for about 40 minutes.
